Malbec from old vineyards planted in the early decades of the 20th century, grown on their own roots in loamy-clay soils in Mendoza’s traditional regions: Las Compuertas and Vistalba. Fifty percent comes from Las Compuertas, at 1,100 meters above sea level, from own-rooted vineyards planted between 1920 and 1940 on loamy-clay soils. The remaining fifty percent comes from Vistalba, at 1,000 meters above sea level, from own-rooted vineyards planted in 1908 on loamy-clay soils with a rocky subsoil. In our vineyards, we do not use herbicides or systemic products, managing them through agroecological practices.
The clusters are destemmed, and the grapes are naturally transferred by gravity into small concrete vessels, where fermentation takes place with indigenous yeasts at temperatures between 26°C and 28°C. A very gentle cap management technique is used to ensure a slow extraction. Aging takes place in French oak barrels of various uses for 16 months.
