All the grapes are sourced from Gualtallary, at 1,400 meters above sea level, where poor soils dominate, with a high presence of stones and calcium carbonate. In our vineyards, we follow an agroecological approach, avoiding herbicides and systemic products to ensure sustainable viticulture.
A pre-fermentation skin maceration is carried out for five days. Vinification follows a protective approach, with fermentation taking place at low temperatures between 14°C and 16°C, using indigenous yeasts in concrete eggs. Aging continues in concrete eggs for eight months.
