Grapes comes from high-altitude vineyards in the Uco Valley, where calcareous soils dominate at elevations ranging from 1,200 to 1,400 meters above sea level. Aging continues in small concrete vats until the next harvest.
We vinify with whole clusters, allowing the grapes to be naturally transferred by gravity into open-top vats. Fermentation takes place with indigenous yeasts at temperatures between 25°C and 27°C over several weeks. The wine is then aged in small concrete vessels for 12 months.
