Grapes comes from Gualtallary, Uco Valley, at 1,400 meters above sea level, grown on calcareous soils with gravel and fine sand. This unique terroir yields a wine of great aromatic intensity and concentration. In our vineyards, we follow an agroecological approach, avoiding herbicides and systemic products to ensure sustainable viticulture.
The clusters are destemmed and naturally transferred by gravity into small concrete vessels. Fermentation occurs without any additives at temperatures between 26°C and 28°C over several weeks. Aging continues in French oak barrels until the next harvest.
