The Apple Cabernet Sauvignon

This Cabernet Sauvignon that comes from Chacayes, Uco Valley at 1300 masl, is grown on deep boulder soils, with low organic content and good drainage that result in a very concentrated wine with a great aromatic intensity. Grapes are destemmed and they get into little concrete vats. They ferment with native yeast at a temperature between 26º to 28º during several weeks. Its aging continues in used French oak barrels until the next vintage.
