República del Malbec
$ 72.500,00
Malbec arrived in Mendoza over 100 years ago, brought by immigrants who taught us how to cultivate and craft it. Today, we bring together our finest terroirs at the foothills of the Andes to represent our República del Malbec with this wine.
This blend is composed of:
- 25% from Las Compuertas GI, sourced from old own-rooted vineyards planted in 1927
- 25% from Gualtallary GI, grown on calcareous soils
- 25% from Los Chacayes GI, planted in sandy soils supported by calcareous gravel
- 25% from San Pablo GI, rooted in loamy-sandy soils
The clusters are destemmed, and the grapes are naturally transferred by gravity into small concrete vessels, where fermentation takes place with indigenous yeasts at temperatures between 26°C and 28°C. A very gentle cap management technique is applied by hand to ensure a slow extraction.
Aging takes place for 16 months, with 50% of the wine maturing in French oak barrels of various uses and the other 50% in oak foudres.
