Old Vines From Patagonia Merlot

It comes from old vines planted by the beginning of the seventies. They are ungrafted and grown on the loamy soils of Allen, in the province of Rio Negro. We destem the grapes and they are dropped into little concrete vats where they ferment with wild yeast at a temperature between 25º to 27º. During several weeks we carry out a gentle punch down with our hands in order to obtain a slow extraction. Aging continues in French oak barrels for more than a year.
