Pinot Noir from old vineyards planted in the late 1960s, on own-rooted vines in silty soils from Luis Beltrán, Río Negro. In our vineyards, we do not use herbicides or systemic products, ensuring an agroecological approach to vineyard management.
We vinify with 25% whole clusters, while the rest is destemmed. The grapes naturally flow by gravity into small French oak vats, where fermentation takes place with native yeasts at temperatures between 24º and 26ºC. A gentle cap management is carried out to achieve a slow extraction. Aging continues in French oak barrels for 8 months.
