Semillón from old vineyards planted in the early decades of the 20th century, grown on their own roots in clay soils with a subsoil of river stones. In our vineyards, we do not use herbicides or systemic products, managing them through agroecological practices.
The grapes are hand-harvested in small 20 kg crates to preserve the integrity of each cluster. A meticulous artisanal selection is carried out before vinification. The grapes are destemmed and undergo a pre-fermentation skin maceration for five days at low temperatures. Fermentation takes place in French oak foudres with native yeasts at temperatures between 16°C and 18°C.
